Making a Julia Child pork recipe. Help?

Ok, I am making a cerole sauteed pork with a mustard sauce from her Julia Child's cookbook "Mastering the Art of French Cooking." If anyone is familiar with this recipe, I would LOVE some suggestions, encouragements and stories. Anything you can offer. I am making it for my dad's birthday so I don't wanna mess up!! i a so afraid of screwing up the recipe..... help?
